Ingredients for one serving:
- 1T Butter
- 1T Oil
- 1 Onion
- Salt and Pepper
- Thyme
- 1T Red wine
- 1 cup Beef broth
- 1T Flour
- 1T Optional beef glacé
- 1 Slice of French bread
- Melty cheese and Parmesan
Soup:
Dice onions, melt butter and oil on medium-low. Add onions, thyme, salt and pepper. Stir frequently. Cook onions until just golden. Add flour, thyme, red wine, glacé (optional), and beef stock. Stir together and taste. Add salt as needed. Bring to boil then reduce heat to simmer for at least 30 minutes.
Crouton:
Slice your cheese(s) and place on bread. Top with Parmesan. If you have broiler safe serving bowls, go ahead and ladle into bowl. Float your crouton on top and broil 2-4 minutes until the cheese is melted or to your liking.
